Beets, known as Chukandar when I was growing up was not a well known vegetable in Nepal. My grandpa would bring it home from the market once in a while but as a kid, I didn't appreciate this wonderful vegetable. From what I have learned from my sons it seems like kids not appreciating beets is a world-wide crisis.
Over the years I have started eating beets because they are so good for you. Wanting to have more vegetables I used to slice them, along with parsnips, and then bake them with olive oil and salt. It was good but I have found a better use for beets! I have found that spiralizing them makes it more palatable and tasty for the whole family.

Ingredients
- 4 medium Beets
- 1 medium red onion
- 2 carrots (shredded)
- 1 Zucchini
- 1/2 cup chopped cilantro
- 1/4 cup Apple Cider Vinegar
- 1/4 cup Extra Virgin Olive Oil
- 1 tbsp Sesame oil
- 1 large clove of garlic (finely grated in microplane)
- 1 tsp of grated ginger
- 1 tsp Pink salt
- 2 tbsp Tamari or soy sauce
- 1 tsp coconut sugar
Direction
- Follow directions from a booklet for spiralizer and spiralize beets, zucchini, carrots and onions, as shown on pictures below.
- Place spiralized beets in pan and add 1 cup of water and a pinch of salt
- Place the pan on the stove
- As soon as water begins to bowl, turn off the burner
- Remove the pan from the stove, beets should still have some crunch
- Drain beets right away and spread them out on a plate to cool
- Make dressing by combining last 8 ingredients
- Move beets, zoodles, carrots & onion in a large bowl (be able to mix well)
- Add Cilantro & dressing and mix well
- Enjoy!
