Cauliflower Taco

Ever since my husband Kevin decided to become a vegetarian, Taco Tuesdays have been a little bit of a challenge. We love tacos in this house and I have always been creative in hiding veggies in the taco meat. I had come up with cabbage & zucchini mix for tacos for Kevin, along with carrots and onions in it. But they kind of became a mush. I have tried mixing some tofu in it as well but it just didn't taste right.

Last few times I have tried making his tacos using cauliflower as a base. It's been tasty and flavorful. Cauliflower can be very messy. I have always used cauliflower for making curry, with potatoes. I have never had to cut them into small pieces. I have made cauliflower rice a few times and it was such a mess, using a food processor. Now, I just rough cut them into 1/2" pieces on my cutting board, stems and all, and it was so much easier. Because I didn't cut them into small pieces, it held it's texture and didn't get mushy. Cauliflower itself is a pretty bland vegetable so it's easy to spice it with what you like.

Serving Size: 12 tacos

Ingredients

  • 1 head of Cauliflower (Roughly chop Cauliflower into 1/2" pieces or run it through a food processor, not as small as cauliflower rice)
  • 1 Red onion (diced)
  • 1 Zucchini (shredded)
  • 1/2 Organic Firm Tofu
  • 5-6 Cloves of Garlic (chopped)
  • 1/4 cup Grape seed oil
  • 1-1/2tsp Pink Salt
  • 3tbs Taco Seasoning
  • 1tsp Cumin Powder
  • 1tsp Coriander Powder
  • 1/2 Lime 
  • 1/4 cup chopped Cilantro 
  • 8oz Shredded Mexican Cheese 
  • Salsa (optional)
  • Guacamole (optional)
  • Soft taco shells 

Direction

  1. In an open pan, heat oil in medium heat
  2. Add onion and sauté for about 5-6 minutes
  3. Add cauliflower & shredded zucchini in the pan
  4. Cook it for another 10-12 minutes stirring occasionally
  5. Add tofu & garlic, stir well
  6. Add salt, taco seasoning, cumin & coriander powder & stir 
  7. Cook for about 10 minutes, covered
  8. Remove the lid and mix and cook for a couple more minutes
  9. Add Cilantro & lime juice, and mix to incorporate them all
  10. Serve over two soft Tortillas, with homemade Guacamole, salsa and cheese
